Oh magoo! It’s 7pm on a rainy Saturday, you’ve spent most of the day, in one position, intently watching YouTube videos, and you are starving. You’ve unabashedly submitted your body to a lazy day but aren’t quite sure if you want your diet to venture into Liz Lemon territory.

whole wheat spaghetti with garlic blistered tomatoes
whole wheat spaghetti (a few sticks or a few pounds, depending on the state of your stomach)
1 pint grape tomatoes
1-2 tablespoons olive oil
2-3 cloves garlic, coarsely chopped
red pepper flakes
Sea salt/Himalayan pink salt/any schmancy salt
Heat your olive oil in a sauté over medium high heat. Add the garlic and sauté for a minute or until golden brown. Add your grape tomatoes and let sit for 2 minutes until they start to blister. Turn off the heat, give them a stir, and let them sit for a couple more minutes. Season with your schmancy salt and red pepper flakes and set aside.
Bring a pot of water to a boil. Salt the pot and add a couple drops of olive oil. Add your pasta once the water comes to a boil and cook for 9-11 minutes or until al dente. Add your blistered tomatoes and garnish with basil. Serves 1-2.
