vegan chocolate avocado mousse (serves 2)
1/4 cup dark chocolate or unsweetened cocoa powder
1/4 cup coconut milk
1/4 cup agave nectar
1 tsp vanilla extract
Melt chocolate, if you choose to use that instead of cocoa powder. Mix all ingredients in a food processor, until satisfied with the consistency. Chill for a few hours (if you can wait!). The consistency is pudding-like if you eat it right away but changes to more of a mousse consistency once chilled for a few hours. Top with whatever floats your boat – from fruit, to chocolate shavings, to chia seed – and nom away! Serves 2.
